Properties:
This honey contains a minimum pollen percentage of 38% Erica sp. and 8% Calluna. Its pollen spectrum includes Fabaceae, Cistaceae, blackberry, Asteraceae, etc., and in our case, also chestnut. In its liquid phase, its color varies from dark amber to brown and even black, sometimes with reddish tones. In the cream phase, it has a dark amber color with brown and reddish tones. It has an intense and very persistent aroma reminiscent of autumn leaf litter, humus, and mushrooms. The taste is sweet, with a clear bitter component and distinct salty notes, which are more pronounced if accompanied by honeydew. It is produced in mid-mountain areas and, in our case, in the apiaries of Ferreras.
